Fallis joined the Indigo Road team when he helped open the company’s upscale Japanese restaurant, O-Ku, in March 2010 as general manager. Under his management, O-Ku was named one of Esquire’s 20 Best New Restaurants of the year and one of the Top 50 Hot Spot Restaurants in the nation by OpenTable.
Prior to O-Ku, Fallis worked closely with Indigo Road managing partner, Steve Palmer, at the Peninsula Grill in Charleston, working his way up from server to the restaurant’s general manager and again helping the restaurant earn honors as one of Esquire’s Top 20 Best New Restaurants of the year. He then went on to consult with Palmer and open restaurants in Florida with the Ginn Clubs and Resorts.
